This coffee was produced by Jairo Arcila at the farm Santa Monica in Armenia, Quindio. Cherries were carefully hand-picked to ensure perfect ripeness, and then hand-sorted to remove defects. It was then sun dried on raised beds, in temperature controlled conditions until the ideal moisture content is reached.
The varietal is Java, which reached Colombia via Ethiopia, Indonesia and Costa Rica.
This is a rare and unusually high quality natural coffee, with tasting notes of raisin, blueberry, dark chocolate, lime and florals.
Jairo Arcila is no stranger to coffee, having worked as the mill manager for Colombia's largest exporter until he retired in 2019. His first coffee business was a farm, which he invested in in 1987, following it up with 4 further farm investments over the years. He is now a significant local employer.
