Huehuetenango is one of Guatemala’s most respected coffee origins, lying in the West of the Country, close to the border with Mexico. Union Cantinil, composed of coffee farmers in the high mountains to the North and West of the city of Huehuetenago, produces coffees mostly processed at farm level.
Each farmer will harvest ripe cherries, and depulp them mechanically, leaving them to ferment overnight to loosen the last of the mucilage. These beans are then washed, and laid out to dry wherever space permits. Roof tops, patios and tarpaulins are all called into action to help make sure coffee is fully dried. Because of the mountainous terrain, sunlight to dry the coffee is at a premium. The beans are regularly turned to prevent mould or over-fermentation defects. Once completely dried, the coffee is delivered to the Union Cantinil buying station where it is evaluated, graded and consolidated.
Coffees delivered into Union Cantinil are only from around a 15km radius catchment area, but because of the altitude of this region (1500-1800 metres above sea level) the aspect (mostly North-facing mountians for slower growth) and the classic varietal selection (Bourbon, Caturra, Catuai and Pache) these coffees are considered amongst the best in Huehuetenango.
This coffee is a classic example of a really good washed Guatemalan coffee. Medium body, balanced acidity and sweetness and those classic coffee flavours of Bakers Chocolate, White Grape and Toffee.
