The journey through Speciality Coffee takes many paths, but for a lot of people, the first time they taste a light roast espresso is a landmark moment for them, unforgettable and the moment they realised how much more there is to taste in coffee. It certainly was for me.

It was December 2011 and I was visiting my Brother-in-Law and Sister-in-Law in New York. A friend of mine who had worked at Starbucks in Seattle while I was working for them in Wigan had moved to the city and was working as a barista for a small chain of Specialty shops in the City. I dragged the group of us to go and see him, and ordered an espresso - Colombia Piendamo. He weighed the shot as it poured, and it looked good to me, so I was surprised when he threw it away and started again for me. When I got the re-made espresso I was absolutely blown away. Sweetness like I’d never tasted in a coffee before, bright citrus acidity and a viscosity and stickiness that was just astonishing.

To be honest, right there and then, I wasn’t 100% sure that I liked it, but I knew I wanted to tell everyone about it, so I bought a bag (he may have gifted it to me) and took it home to share with some colleagues. Needless to say that I struggled to get the same level of precision as he managed, and the resulting espressos found few fans, myself excluded. I went looking for people making coffee in this sort of style in the North of England. There weren’t many, in fact even in That London this style was still the exception. I had my first exposure to Speciality Coffee and I LOVED it.

If this story doesn’t sound like an experience that you’ve had, then what I want you to take from this coffee is the same excitement, wonder and feeling of discovery that I had in New York in 2011. If this style is unfamiliar to you, you might not like it right away, and that’s absolutely fine.

Fjødr (not the right letters, but as close as I can get) is taken from the Old Norse word for Feather, and this is my lightest, brightest roast. A blend, which will change with the availability of coffee, composed of coffees from all over the world, but which will always feature great coffees from Central and/or South America, and also from Africa. At launch, this coffee will also have a really delicious coffee from India as part of the blend too, but like I say, this coffee is going to change as coffees come in and out of availability, and the specific flavour notes will also move.

What will be the same though is this - it will be light, bright, fruity and delicious. A sherbet lemon of an espresso, a peach iced tea of a cold brew and a mai tai of a pourover.
