Whilst single origin coffees often get the plaudits, and are certainly more likely (these days) to win you a barista championship, the humble blend remains the backbone of the coffee industry, and the majority of the coffees you will see in speciality coffee shops, delis or in the farm shop will be blends.
So its fitting that the first coffee I want to introduce to you is my first blend, Dagr (pronounced DAR-ger) which is the Old Norse word for Day.
When I’m working, whether it’s at my desk or at my roaster, I want to have a mug of coffee on hand to keep me going through the day. It has to be bright enough to be interesting, but not too sharp. It has to be balanced, flavourful and sweet, but not sickly. It has to taste like coffee, but on a REALLY good day. Sometimes I like to try something new, but between you and me, sometimes I just need a cup of good coffee and I don’t have time to set up a grinder properly and make sure that everything is perfect.
With Dagr, what I want to share with you is an easy-drinking all day coffee that will make a great pot of filter coffee to share with a couple of guests (along with the custard creams;) or a beautiful V60 for yourself as you put on some vinyl on Sunday morning and look out of the window at the rain.
If you’ve got a Sage Barista Express, or a La Marzocco Linea Mini, or a Victoria Arduino Eagle One Prima, I have you covered with this coffee too. Once set up properly, this coffee is going to make a beautifully balanced espresso which will satisfy on its own, or will make a really tasty cappuccino or latte, provided you want it to be mild, mellow and creamy.
I looked at classic origins and processes for this coffee, this has to hit the spot all day, every day, all year. So Dagr is going to be a blend of coffees from Central and South America.
